When it comes to cooking meals for my family I'm great at making the main dish. Side dishes are another story. Growing up, my mother always served us two side dishes and one of those was always a green veggie of some kind. But when I try to make side dishes, the veggies end up soggy, limp and lacking in that certain zing. Can you help me? I really want at least one side dish to go with each meal. Please leave a comment with tips and ideas. I'd really appreciate it!

Menu Plan Monday
Week two as a working mom. I've found that having these weekly menus written down really helps me feel less stressed. In the limited amount of time I have in the evenings, the last thing I need is to try to come up with a good meal off the top of my head.
Monday - Crockpot pot roast - I bought a couple of these crockpot "kits" yesterday. The roast, veggies and seasonings were all included. But they can't be frozen so I'll cook them both in the crockpot at the same time, then freeze one roast to be eaten at a later date.
Tuesday - Pesto chicken - Didn't get to make this last week. My husband decided to make Indian for dinner and used the chicken I had thawed out for pesto chicken.
Wednesday - Spaghetti bake
Thursday - Chicken and rice and beans - This is a favorite with my kids. I just cook the chicken w/ some taco or fajita seasonings and serve it up with black beans and rice ala Chipotle bowls.

As you can see, I'm not really feeling inspired this week and could use some ideas on filling the last few days. Help!

Menu Plan Monday
Tomorrow is my first day back to work after a 4+ year "retirement" to play with my kids all day. This week's menu is designed to be easy for a working mom. We'll see how that works out.
Monday - Pesto chicken with RiceARoni and a random veggie
Tuesday - Freezer chili in the crockpot
Wednesday - Meatloaf muffins with lots of veggies added in.
Thursday - Bourbon chicken with rice and a veggie
Friday - Splurge and eat out to celebrate my new job! And I'm having some friends over for nachos and spirits.

Menu Plan Monday - 1/19
Happy 60th birthday Daddy!! I love you!
Okay.. here's the menu for the week...
In no particular order (breakfast and dinners)...
Heart Attack Breakfast Casserole - This is already in the oven baking!
Chicken Noodle Souperole - Already cooked!
Apple Waffles - We'll probably have these for dinner one night.
Pizza Wraps - I never got around to making these last week so I put them on the menu for this week.
Meatloaf Muffins
With leftovers and Big M having several night classes this semester, this should cover us for the week.

Healthy Baked Oatmeal (this will be my 2nd try for this type of breakfast food)
Copy Cat Taco Bell Quesadilla (minus the mayo.. ew!)

Menu Plan Monday
Here's what's on the menu for this week.Black Bean Soup
Sweet and Tangy Pot Roast - I have to check and see if I have chuck roast in the freezer though.
Pizza wraps - I'll puree some yams to add to the sauce and revamp the recipe a bit to get some veggies in it for the kids.
Chicken Noodle Souperole - I'll modify this too. I'll use onion soup instead of mushroom and see if I can hide some veggies in it too.
Chili
I'm going to try to make some of these garlic muffins this week too. We'll see how well it goes because it's all dependent on how bad my back problems are this week.
I'm hosting Bunko Friday night. I'm debating trying to make a Pesto Cheese Blossom (this is just heavenly!!) or a simple baked nacho/taco dip.

Menu Plan Monday
I don't normally do these memes, but I need some help getting my life together so what the heck.
Lunch is the worst because it's just Shaggy and me. I admit, it's not usually our most nutritious meal.
Monday
Lunch - Premade salad
Dinner - Leftover "shepherd's pie" that Big M made using leftover chicken. Not a traditional shepherd's pie by any means but the kids love it and we were able to sneak some spinach into it.
Tuesday
Lunch - Premade salad
Dinner - Bourbon chicken, rice and a veggie - I have most of the ingredients in stock so I won't have to add much to my grocery list.
Wednesday
Lunch - Leftover chicken from Tuesday
Dinner - Beef Porcupine Balls and a veggie - I don't normally buy Rice-A-Roni, but these look interesting. And if we like them, it looks like a recipe I can easily double or triple and stock in the freezer for lazy days.
Thursday
Lunch - Fruit and veggies
Dinner - Meatloaf muffins - I'll probably sneak some sweet potato puree into these.
Friday
Lunch - Chili - I have this in the freezer. I'll stick it in the crockpot in the morning to thaw and heat.
Dinner -Chili with cheese and chips
Saturday
Lunch - Deli sandwiches
Dinner - Big M can be in charge of dinner
Sunday
Lunch - Leftovers
Dinner - Italian sausage and peppers on rolls
