Meatloaf Muffins

Tonight's menu called for Meatloaf Muffins.

These were DELISH!!! SO so easy to make!

Ingredients

1 lb extra lean ground beef
1 box Stove Top stuffing mix (I used a my homemade recipe)
1 cup water
2 egg whites
1 medium onion, diced
1 T A1 sauce

Directions

Mix all ingredients together and divide into 12 muffin cups that have been sprayed with non-stick cooking spray. Bake at 350 degrees for 35-40 minutes.

12 servings (2 ww points each)

Here's how I modified it...

I used about a cup of frozen chopped onion.
I used about a tablespoon of A1.
We had some finely chopped, leftover carrots and cauliflower so I tossed that in too.
I added about 1/4c ground flax seed.
I added 1 c of shredded cheddar.
Didn't use the egg whites.

I plan on making this regularly! I think I'm going to start making this in advance, roll it into balls and freeze it so I can just pull it out in the morning, let it thaw and then cook it for dinner. I love that the we put veggies into it.
