I had coupons for some Martha White muffin mix so I let the kids each pick out the flavor they wanted. As I read off the flavors, "Strawberry..... mixed/wildberry..... lemon poppyseed..... chocolate chip...." I was met with screams and squeals for chocolate chip. Shocker. Into the cart they went. I thought, How am I going to make these healthy??
Well, tonight I think I did it! I added about 3/4 cup of wheat germ and one can of pureed peaches with no juice. I sampled the batter before I poured the double batch into the baking pan; not too shabby!
Since it's a double batch (and because I don't have a muffin tin), I poured it into an 9x13 pan. They are in the oven happily baking away. I expect the kids will think it's a real treat to have chocolate chip "cake" for breakfast tomorrow!
