Menu Plan Monday


Week two as a working mom. I've found that having these weekly menus written down really helps me feel less stressed. In the limited amount of time I have in the evenings, the last thing I need is to try to come up with a good meal off the top of my head.

Monday - Crockpot pot roast - I bought a couple of these crockpot "kits" yesterday. The roast, veggies and seasonings were all included. But they can't be frozen so I'll cook them both in the crockpot at the same time, then freeze one roast to be eaten at a later date.

Tuesday - Pesto chicken - Didn't get to make this last week. My husband decided to make Indian for dinner and used the chicken I had thawed out for pesto chicken.

Wednesday - Spaghetti bake

Thursday - Chicken and rice and beans - This is a favorite with my kids. I just cook the chicken w/ some taco or fajita seasonings and serve it up with black beans and rice ala Chipotle bowls.

Friday -

Saturday -

Sunday -

As you can see, I'm not really feeling inspired this week and could use some ideas on filling the last few days. Help!

I like Dirty Rice & Kielbasa - a family favorite. One pound of kielbasa make enough for another meal. Quick and tasty. Let me know if you'd like the simple recipe.

Hey, cuz! I'm finally catching up on your blog after being in Siberia--how much I missed in just 5 days! I'm glad that you're enjoying your job! I hope that your cold is getting better and no more flu!

I'm curious about your spaghetti bake recipe. Is it also a crock pot deal or an oven recipe? We love spaghetti, so I'm always looking for ways to mix it up a little.
